We now have some fairly reliable new leaked information.
The set will be similar to 75978 Diagon Alley, that's the 2020 Diagon Alley D2C ($450 / 450 EUR) with lovely, minifig scale detailed shops, so this is the best possible outcome.

Teachers / Ministry:
Cornelius Fudge
Professor McGonagall
Horace Slughorn
Shopkeepers:
Aberforth Dumbledore

Zonko's employee OR Carriage Driver (slim chance of both?)
That makes for 12 minifigures. (contrast with Diagon Alley's 17 minifigs, two of which admittedly are mannequins)
Off of that alone, we can safely speculate that we'll see the Three Broomsticks, Hog's Head, Honeydukes, and possibly Zonko's (depending on that 12th minifig), and this will - at least partially - be a Half-Blood Prince / Prisoner of Azkaban set.

According to rumour it will have builds on three 16x32 plates. (contrast that with Diagon Alley's 4 plates) We don't know if those plates are standalone units or if they're grouped together (like 21359 the Italian Riviera set). The number of minifigs is consistent with 3/4 the size of Diagon Alley. As for the price, if we take 3/4 the price of the Diagon Alley set, that's 337.50, which means the lowest price we're expecting for the Hogsmeade set is a good 42.50 more expensive. That's quite a jump, roughly 11%, but it's not entirely inconsistent with price jumps of late, and it's possible there might be some extra builds, like a carriage (🤔), a bench, a fountain, or signs that help account for the jump, bearing in mind Diagon Alley already had a price increase since 2020.
There's been an additional leak naming the stores on each of the plates, but I cant't speak to its reliability. If correct, we can expect to see:
1) Owl Post, Dervish and Banges, Honeydukes
2) Three Broomsticks
3) Hogs Head 'Inn' (we know how lego feel about pubs), Zonko's Joke Shop
So that's six shops / businesses, four of which we can predict from minifigs alone. The two new additions are the Owl Post, which makes sense, and if it's done similarly to how it was in the mini DA series' Weasleys' Wizarding Wheezes set, it'll have a small footprint and run tall, which would help three shops fit on one plate.
Dervish and Banges is a music shop. Having done a Wizarding Music shop as part of my Horizont Alley MOC, this is an easy one. You use a perfectly regular saxophone piece, and voilà , claim it's self playing. You reference the books, and sell self-playing flutes. It doesn't require things you haven't got, and is far simpler to get right-ish than Wiseacre's, say.
That's what we know for the moment, rumour is we can expect to see the set officially presented next week. As it's a D2C, we're not likely to see much by way of leaks before then.
